Bio

Ms. Prema Monteiro is an Associate Professor of Culinary Arts, and Hospitality & Events Management at the University of North Alabama, in the Department of Visual Arts and Design. She completed her EdS from the University of Wisconsin-Stout in 2006; her Masters in Hospitality and Tourism Management in 2000 and a Bachelor of Science in Hotel, Restaurant and Tourism Management in 1999, also from the University of Wisconsin-Stout. She has been at UNA since Fall 2012, having previously launched the Culinary Arts and Hospitality Management programs at J F Drake State Technical College in Huntsville, Alabama in 2007. She taught at the University of Wisconsin-Stout in their Hotel, Restaurant and Tourism Management undergraduate program from 2000-2007. Ms. Monteiro has taught a variety of culinary arts, hospitality and events management courses for undergraduate students, online, and in hybrid, and traditional formats, and has been involved with online course development since 1999. Ms. Monteiro is a certified proctor for the nationally recognized ServSafe certification. She has reviewed several culinary textbooks and serves on several two-year college and high school advisory boards. She has led students on a unique study abroad course in Peru, and recently contributed the chapter on Desserts published in the book, “A Traveler’s Palate: A collaboration of the University of North Alabama’s students in Culinary Arts, Photography, and Technical Writing.” Preceding these years in academia, she has 11 years of international work experience in various front-, and back-of-the-house areas of the hospitality industry
